Jingisukan
— Hokkaido's grilled lamb on a domed iron pan
Lamb grilled on a domed iron pan, eaten all over Hokkaido. In Sapporo the dish sits on the old brewery grounds at Naebo, where a red-brick museum and the beer halls share a single walled block of the city.

How to actually get there
- Sapporo Station → Naebo Station (JR Hakodate Main Line).
- Naebo Station north exit → Sapporo Garden Park (about 8 minutes on foot).
- Walk the museum's brick block first, then cross the grounds to the beer halls.
- Book the guided tour in advance if you want it; the self-guided route needs no reservation.
- JR Hakodate Main Line, east from Sapporo Station
- From Sapporo Station take the JR Hakodate Main Line east and get off at Naebo. From the north exit it is about an eight-minute walk to Sapporo Garden Park, the grounds that hold the museum and the beer halls. Trains on this line are frequent through the day, so no timetable planning is needed.
- Return from Naebo Station
- Walk back to Naebo Station and take the JR Hakodate Main Line to Sapporo Station. Service is frequent into the evening, but the last train leaves before midnight. Check the platform display if dinner has run long.
About the place
The pan is the point. Its centre swells into a grooved dome, so the lamb cooks on the high ground while vegetables sit in the lower rim and take up the juices that run down. Two ways of eating it split the island. Sapporo's is plain lamb, grilled first and dipped in sauce afterwards; around Takikawa, across the Sorachi region and north of it, the meat is marinated before it ever reaches the pan. Lamb is the milder cut and mutton the fattier, stronger one. The dish is eaten across the whole of Hokkaido, indoors and out, and in blossom season the pans move into the parks.
How to enjoy it
The museum runs two ways: a self-guided route with a multilingual audio guide, and a guided tour that has to be booked ahead. Take the brick block first and the table second. If the pre-marinated style is the one you are curious about, both are served here and elsewhere in the city, so it is worth asking before you order.
Background & history
Sheep came to Hokkaido as policy rather than appetite. When the First World War cut off imported wool, the government pushed farmers into raising them, and breeding stations went up at Takikawa and at Tsukisamu in Sapporo. The meat only became a dish cooked for pleasure after the Second World War, and in 2004 it was named a Hokkaido Heritage. The brick hall on these grounds began in 1890 as a sugar refinery before the brewery took it over, and the company itself goes back to a government brewhouse of 1876.
Before you go
- Cash
- The museum is no longer free to enter: admission was introduced in July 2026, and the guided tour is charged separately again. Prices change, so confirm them on the official site before you go. Anything you eat or drink in the beer halls is billed on its own.
- Good to know
- The whole site closes on 31 December, and unscheduled closures are announced on the official site. The guided tour keeps its own weekly rest day even when the self-guided route is open. Between December and March, snow and ice make the walk from the station slower.
- Another way
- Hokkaido Chuo Bus runs a direct service from the north exit of Sapporo Station to the Sapporo Beer Garden stop, which sets you down at the gate. The Toho Subway Line also works: get off at Higashi-kuyakusho-mae Station and walk about ten minutes.
- After you get off
- Leave Naebo Station by the north exit and follow paved streets north-west to Sapporo Garden Park. A brick chimney carrying a red star stands over the grounds.
